Description
A leading light among Argentinian white blends, made with sauvignon blanc, Semillon, and Torrontes, is vivid and energetic with bright, focused acidity and lots of sliced dried-citrus and stone undertones.
It combines the exotic notes of the aromatic varieties with the seriousness and freshness of the Semillon. It has integrated spice from its time in barrels.

Practices: Hand picked, destemmed, Sauvignon Blanc and Semillon: 6h maceration with dry ice in the press (previous to the pressing), pressing, stripping during 36 hours and racking to the concrete eggs. Fermentation with wild yeasts. Torrontes: pressing without maceration. Selected yeasts. Fermentation in stainless steel tank. Once the alcoholic fermentation was over, it was preserved on the lees during a month to improve the mouthfeel. Final blending and racking to barrels (battonage once a month). 100% in new French oak barrels for 4 months.
